Bacon And Egg Fried Rice

Ingredients

  • 3 cups day old cooked rice
  • 3 slices bacon chopped into 1 cm squares
  • 2 spring onions thinly sliced
  • 1/2 small onion, finely chopped
  • 70 grams frozen peas
  • 2 eggs beaten
  • 1/2 tablespoon dark soy sauce
  • Salt to taste
  • 2 tablespoons oil

Process

Heat the oil over a medium flame in a frying pan big enough to hold all the ingredients.

Add the onion and cook until it just starts turning translucent, about 2 minutes

Add the chopped bacon and fry until it just starts turning brown, about 3 minutes

Add the frozen peas and stir until the peas are cooked, about 2 minutes

Move all the ingredients to one side of the pan, and add the beaten egg to the empty side. Let the egg just start setting, and start scrambling it. Once the egg is half cooked, mix it with the other ingredients already in the frying pan, and add the rice. Stir constantly until the egg is cooked. This won’t take more than a minute or two.

Add the dark soy sauce into the rice, making sure you drizzle it all over the pan, not just in one place.

Add the finely chopped spring onions.

Mix all the ingredients nicely, until bits of the rice are coloured with the soy sauce, and the ingredients are evenly mixed.

Add salt to taste.
